Ingredients:

  • 1/2 cup tomato paste
  • 1/2 cup chopped paneer
  • 1/4 cup cooking oil
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

For Paneer:

  • 1 cup paneer, cubed
  • 1 tablespoon cooking oil
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • Salt to taste

Instructions:

For Chole (Chickpeas):


  1. Prepare Chickpeas:

    • If using dried chickpeas, soak them overnight, boil until tender, and set aside. If using canned chickpeas, drain and rinse.

  2. Cook Onion-Tomato Base:

    • Heat oil in a pan, add cumin seeds. Once they splutter, add finely chopped onions and sauté until golden brown.
    • Add ginger-garlic paste and cook until the raw smell disappears.
    • Add tomato puree, tomato paste, and cook until oil separates from the mixture.

  3. Spice it Up:

    • Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Cook the spices for a few minutes.

  4. Add Chickpeas and Paneer:

    • Add the cooked chickpeas to the masala. Mix well.
    • Add chopped paneer cubes and garam masala. Stir gently to coat the paneer and chickpeas with the spices.

  5. Simmer:

    • Let the mixture simmer on low heat for 15-20 minutes. Adjust the consistency by adding water if needed.

  6. Garnish:

    • Garnish with fresh coriander leaves.

    • Heat oil in a separate pan. Add cumin seeds.
    • Add cubed paneer, turmeric powder, and salt.
    • Sauté until the paneer cubes are lightly browned on the edges.
