Ingredients:
- 4 hard-boiled eggs, peeled and halved
- 2 large onions, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, chopped (adjust according to spice preference)
- 1 tablespoon ginger-garlic paste
- 1/2 cup plain yogurt
- 1/2 cup chopped coriander leaves (cilantro) for garnish
- 2 tablespoons cooking oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust for spice level)
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- Salt to taste
- Water as needed
Instructions:
Boil Eggs:
- Boil the eggs until they are hard-boiled. Once done, peel and halve them.
Prepare the Curry Base:
- Heat oil in a pan. Add cumin seeds and mustard seeds. Let them splutter.
- Add chopped onions and cook until they become golden brown.
- Add ginger-garlic paste and sauté until the raw smell disappears.
Add Spices:
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Add chopped tomatoes and green chilies. Cook until the tomatoes are soft.
Add Yogurt:
- Whisk the yogurt and add it to the pan. Stir continuously to avoid curdling.
- Cook the mixture until the oil starts to separate from the masala.
Add Eggs:
- Gently add the halved boiled eggs to the curry. Coat them with the masala.
Simmer:
- Add water to achieve the desired consistency of the curry. Bring it to a simmer.
Finish with Garam Masala:
- Add garam masala and mix well. Adjust salt and spices according to taste.
Garnish and Serve:
- Garnish with chopped coriander leaves.
- Serve the Anda Curry hot with rice or bread.
