Ingredients:
For Usal (Sprouted Lentil Curry):
- 1 cup mixed sprouts (moong, matki, moth, etc.)
- 1 large onion, finely chopped
- 1 large tomato, finely chopped
- 2-3 green chilies, finely chopped
- 1/2 cup chopped mixed vegetables (optional)
- 1/4 cup grated coconut (optional)
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon asafoetida (hing)
- 1/2 teaspoon turmeric powder
- 1 tablespoon Misal masala (adjust to taste)
- 1 tablespoon oil
- Salt to taste
- Coriander leaves for garnish
For Kat (Spicy Gravy):
- 2 tablespoons oil
- 1 large onion, finely chopped
- 2 medium tomatoes, chopped
- 2 tablespoons Misal masala
- 1 tablespoon red chili powder (adjust to taste)
- Salt to taste
- Water as needed
Other Ingredients:
- Pav (bread rolls)
- Chopped onions for garnish
- Lemon wedges
- Finely chopped coriander leaves
Instructions:
For Usal:
Sprout the Lentils:
- Soak the mixed lentils overnight and sprout them. You can use a mix of moong, matki, moth, or any other lentils you prefer.
Cook Sprouts:
- Steam or pressure cook the sprouted lentils until they are cooked but still have a bite.
Prepare Usal:
- Heat oil in a pan. Add mustard seeds, cumin seeds, and asafoetida.
- Add chopped onions and sauté until golden brown.
- Add green chilies, tomatoes, and cook until tomatoes are soft.
- Add turmeric powder, Misal masala, and salt. Mix well.
- Add the cooked sprouts and vegetables. Cook for 5-7 minutes.
- Optionally, add grated coconut and mix well.
- Garnish with coriander leaves.
For Kat (Spicy Gravy):
- Prepare Kat:
- Heat oil in a pan. Add chopped onions and sauté until golden.
- Add chopped tomatoes and cook until they are soft.
- Add Misal masala, red chili powder, and salt. Cook the masala until the oil separates.
- Add water to achieve the desired consistency. Bring it to a boil and then simmer for 10-15 minutes.
Assembling Misal Pav:
- Serve Misal Pav:
- In a serving bowl, place a portion of the Usal (sprouted lentil curry).
- Pour the hot Kat (spicy gravy) over the Usal.
- Garnish with chopped onions, coriander leaves, and a lemon wedge.
- Serve Misal Pav with pav (bread rolls) on the side.
